I’m so proud of my mom who decided to make a good choice for her body and her health and already lost 10 kilos (22 pounds) in the less than 4 months. She’s using the Weight Watchers program. I made two recipes of the Best of Weight Watchers cook book in her honour. Both recipes are vegetarian (or vegan) friendly!
This spinach-tomato orzo is 8 smartpoints.
* 240 gr orzo or risoni
* 200 gr cherry tomatoes, cut in half
* ts olive oil
* 300 gram fresh spinach
* 100 gram light feta cheese, crumbled
Boil the orzo. Heat the olive oil in a skillet and fry the tomatoes for 5 minutes. Add the spinach and heat for a couple more minutes.
Mix the orzo with the vegetabpes and serve with the feta. Vegans can leave the feta out.
120 gram cream cheese light
80 grams sundried tomatoes (without oil)
150 grams cannellini beans
4 whole wheat tortillas
Handful of rocket
Mix the cream cheese with the sundried tomatoes and the cannellini beans. I used a food processor for this. Divide the mixture and the rocket over the wraps and fold them. Heat a skillet and shortly warm the quesadillas on both sides.
