Zero Pasta

I tried something new today: Zero Pasta. It’s a ‘pasta’ that is gluten free, fat free, sugar free, vegan and high in fibre. It only contains 9kcal per serving.
It almost sounds impossible right? Well, it isn’t. This pasta is made from konjac flour and konjac is a plant.
I was quite sceptical about it, but also very curious so I gave it a try! And I have to say, it tasted quite good. My boyfriend didn’t even realize that we weren’t eating ‘real pasta’. I just made a tasteful but healthy sauce to go with the zero pasta and we had a great plant based meal that hardly contained calories.
Below is the recipe for 2 portions.

Ingredients:
1 bag Zero Pasta (or Slim Pasta)
1 clove garlic, finely chopped
1 red bell pepper, finely chopped
3 tomatoes, finely chopped
1 eggplant (aubergine)
2 tbs pinenuts
1 tbs italian herbs
handful of fresh basil

Roast the pinenuts for 3 minutes in a frying pan without oil or butter, set aside to cool. Drain the Zero Pasta, rinse well and set aside to dry.
Heat 1tbs olive oil in a frying pan and fry the garlic for 30 seconds, add the aubergine and fry while stirring for a couple of minutes. Add the red bell pepper and fry for another 2 minutes before adding the tomatoes.
Let it simmer on low fire for a couple of minutes and then add the italian herbs and the zero pasta. Stir for about 2 more minutes and serve with the pinenuts and the basil.
