Summer is my favorite season and it always takes me a while to adjust to autumn. Once it’s late October or November I totally don’t mind the weather anymore. I can actually enjoy strong winds, leafs twirling around and evenings with the fire place on. I love many of the foods that autumn has to offer like sweet potatoes and pumpkins. And Halloween is always a lot of fun.
But September is always a bit difficult. You want a long Indian summer. A few more nice days after August. But it’s often cold, rainy and grey. Especially in the Netherlands where I live.
I decided that I wanted to create a recipe to make the transition from summer to autumn a bit more easy. That’s how I came up with the idea of this autumn salad. It’s a salad with fruit to keep the summer feeling but it also has pecans and blue cheese as autumn comfort food.
Just cut a nectarine in slices and add it to some mixed lettuce. Crumble a bit of blue cheese and sprinkle with pecan nuts.
I made a dressing by mixing 1 teaspoon of honey with 1 teaspoon of mustard and 2 tablespoons of olive oil.
