Salad with beets, grapefruit, walnuts and goat cheese
This salad is like a taste explosion in your mouth, it has the sweetness of the red beets, a bit of sour because of the grapefruit, softness from the goat cheese and crunchiness from the walnuts.
The nice thing about this salad is that it’s also really suitable to eat when it’s cold outside, so you can remain your healthy lifestyle in winter!
For 2 portions I’ve used 1 small bag of lamb’s lettuce, 1 grapefruit, 3 red beets (cooked and peeled), 50 grams of goat cheese and 2 table spoons of walnuts.
Do you want a vegan version? Just skip the goat cheese!
I’ve sprinkled it with olive oil, but you can also make a honey mustard dressing by mixing 1 teaspoon of mustard, 1 teaspoon of honey and 5 tablespoons of olive oil.
