Cauliflower Soup with Curry Hummus
This vegan soup is perfect comfort soup for a cold and rainy evening. With only 5 ingredients, it’s super easy to make. I’ve got the recipe from the Maza website (no sponsor), you can read it here in Dutch. Below is the English version of this healthy and heartwarming recipe. The recipe is for 8 starters or 4 big bowls.
800 ml (3 cups) vegetable broth
1 package Hummus Curry (or regular hummus with curry spices)
2 tbs parsley, finely chopped
1 tbs roasted hazelnuts, chopped
Chop the cauliflower in florets and boil it in the vegetable broth for 10 minutes. Add the curry hummus and mix with a (stick) blender.
Put the soup in 8 glasses or 4 big bowls and garnish with the parsley and the hazelnuts.
