Mackerel Superfood Salad
This salad is filled with superfoods! Smoked mackerel, as an oily fish, is filled with omega-3 and vitamin D. Quinoa is high in fiber and protein. And broccoli is known for its antioxidant benefits. You don’t need a dressing for this gluten free salad, making it filled with nothing but goodness!
Below is the recipe for 2 people.
Ingredients:
* 100 grams (3.5 ounce) baby spinach
* a handful rocket lettuce (I used 25 grams)
* 100 grams (3.5 ounce) quinoa
* 10 cherry tomatoes
* 1 small stalk broccoli, chopped
* broad beans
* 2 smoked mackerel fillets
* fresh parsley
Prepare the quinoa as stated on the package. Bring water to boil and boil the broccoli and the broad beans for 5 minutes. Cut the tomatoes in half. Mix the spinach leaves with the rocket, tomatoes and quinoa. Toss in the broccoli and broad beans. Divide the salad over 2 plates. Cut the mackerel in pieces and serve on top of the salad. Sprinkle with fresh parsley.
