Recipe Vegan Cookies & Cream brownies

I love making vegan sweets and now I made a triple layer vegan treat! These vegan cookies & cream brownies are a real treat. Besides being 100% plant-based, they’re raw too! I made them with coconut butter. As opposed to coconut oil you can not fry in coconut butter, but it’s a perfect smooth addition to your sweets, smoothies or sauces.

I made these raw vegan cookies & cream brownies for which you don’t need an oven. Cookies and cream is a term that’s often used for flavors similar to Oreo cookies. I combined this flavor with a vegan brownie layer and a layer of swirled chocolate on top.

Recipe Vegan Cookies&Cream Brownies

Ingredients

For the brownie layer:
250 gram (2 cups) walnuts
250 gram (1 1/2 cup) medjool dates, pitted
30 gram cacao powder
1 ts vanilla essence

For the Cookies&Cream layer:
160 grams (1 cup) coconut butter
250 grams (1 cup) plant-based yogurt
50 grams agave syrup or maple syrup
1 ts vanilla essence

For the chocolate layer:
100 grams dark chocolate
100 grams vegan white chocolate

Preparation:
Finely crush the walnuts in a foodprocessor. Add the dates, cacao powder and vanilla essence and mix to a dough has formed.
Line a square or rectangular baking pan with parchment paper and add the brownie layer. Press it with the back of a spoon and put it in the fridge. You can make this layer a day in advance.

Mix all the ingredients for the cookies&cream layer. If the coconut butter isn’t spreadable yet, put the jar in a bowl of warm water. Pour the cream layer over the brownie layer. Put it in the freezer to set. This layer can also be made in advance.

Melt the chocolate au-bain-marie in two separate bowls. Make sure that the cookies & cream layer is completly set before you pour the chocolate over. Pour the dark chocolate layer first and then make swirls with a knife of the white chocolate. Put it in the freezer for 30 minutes to set.

You can make this vegan cookies & cream brownies a few days in advance and save them in the freezer. Let it get to room temperature before you cut it to prevent the chocolate from breaking.
