It’s almost Halloween! You might think of unhealthy candy from trick-or-treating when you think of Halloween. So I love to show you that you can also celebrate Halloween in a healthy way!
I’m sharing the recipe of these stuffed jack-o-lanterns that I’ve made. They’re healthy, vegetarian and vegan!
Cut of the tops of bell pepper per person, remove the seeds. Use a small knife to cut out eyes, a nose and mouth in jack-o lantern style. Sprinkle the peppers with some olive oil and put them in a baking tray. Roast them in the oven in 25 minutes (180C/350F).
You can fill them with any stuffing you like. You could use rice or noodles with vegetables. I’ve stuffed them with pasta and a tomato sauce.
For the stuffing:
Prepare your choice of pasta according to the directions on the package. Cut mushrooms in quarters and fry them for 5 minutes. In the meantime; fry a finely chopped onion and mushrooms for about 3 minutes. Add a can of peeled tomatoes and Italian herbs of your choice. Add the mushrooms to the sauce and let it simmer on low fire for 15 minutes. Mix the pasta with the sauce and fill your jack-o peppers with the pasta mixture.
