Vegan Sushi Bowl
You might have seen several sushi recipes on my site already (like my famous sushi pie) and this vegan sushi bowl is my latest addition. I love it that sushi recipes are easy to make and easy to adjust to your own taste. I made my sushi bowl vegan, but of course you could add fish if you want! Also, making sushi rolls can be quite a hassle but this sushi bowl is fool-proof! Everyone can make this impressive bowl filled with nutrients!
Below is the recipe for 2 vegan sushi bowls.
1 nori sheet, cut in squares
100 grams rice (I used whole grain wild mix)
1 avocado, cubed
1/2 cucumber, sliced
100 grams soy beans
125 grams seaweed salad
Soy sauce and wasabi
Prepare the rice as stated on the package and let it cool. Fill two bowls with the rice. Top with the nori sheet squares, the avocado cubes, the cucumber slices, the soy beans and the seaweed salad. Sprinkle with sesame seeds.
Serve with soy sauce and wasabi.
You could make this dish a few hours in advance and keep it in the fridge until serving. This way you have your healthy dinner ready when you come home from the gym for example!
