Vegan Red Beet Soup
I love it when red beets are in season, they’re cheap and tasty. They taste a bit sweet, so eating this beet soup is a very healthy way to satisfy your sweet tooth.
This soup is vegan and full of vitamins!
Below is the recipe for 3 big portions (or 4 starters)
Ingredients:
4 red beets (peeled and cooked)
1 apple
1 red onion
2 garlic cloves
1 liter (30 oz) vegetable broth
Thyme
Make the vegetable broth. Finely chop the onion and the garlic. Heat 1 tbs olive oil in a big pan and fry the onion and garlic for 2 minutes. Meanwhile chop the beets and apple into small pieces. Add the beets and apple to the pan and fry on low heat for 5 minutes.
Add the vegetable broth and bring to a boil. Cook on low heat for 30 minutes. Serve with thyme.
For non vegans; you can add a swirl of fat free yogurt!
