Vegan Valentine

Happy vegantines day!
Do you want to make a lovely 3 course vegetarian meal for your valentine this year?
This menu is healthy and suitable for vegetarians and vegans.

Starter: Can you feel my heart beet?

For 2 appetizers, cut 150 grams (1 cup) of cooked beets in small cubes. Mix in a bowl with 1 tablespoons pickles, 2 tablespoons parsley and 1 red onion, all finely chopped. Stir in 1 tablespoon of red wine vinegar. Add salt and pepper to taste. Use a heart shape cookie cutter and spoon the mixture onto 2 plates. Decorate the red beet tartare with samphire and goat cheese balls. Replace the goat cheese balls by a few cubes of avocado to make this beet tartare suitable for vegans.

A healthy salad for your loved one. I used lamb’s lettuce and cut cherry tomatoes in half to create a big heart. I cut heartshapes out of red bell  peppers and apples for the middle. I made a dressing with olive oil, mustard and honey (skip the honey for vegans). This salad is very nice with goat cheese, so if the apple of your eye isn’t vegan, you can add some crumbled goat cheese.

This cupcake has a nice surprise: a heart shaped chocolate core. I made the batter for 8 vegan cupcakes using the recipe from the Food Network. I mixed raw cacao powder in half of the batter and baked 4 chocolate cupcakes from it. Let them cool completely. Use a heart shaped cookie cutter to cut 4 chocolate hearts out of the cupcakes.
Place these hearts in 4 cupcake moulds and spread the remaining batter around them. Bake the cupcakes for 20 minutes at 180C/350F.
