Apple Ring Pancakes

I love fruit! I eat an apple every day and the saying that it keeps the doctor away might be true because I’m never ill (knock on wood). I’ve created a recipe for apple ring pancakes. Since the biggest part of the pancake is fruit and the batter doesn’t need any sugar or butter, these apple ring pancakes are pretty healthy! I’ve made a vegan pancake batter, but of course you can use any pancake batter you want.

Below is the recipe and the food video for 2 piles of apple ring pancakes (8 pancakes in total).

Ingredients:
1 banana
125 gram (1 cup) flour
2 ts baking powder
1 ts cinnamon
250 ml (1 cup) plant based milk
2 apples

Mix all the ingredients except the apples for the vegan pancake batter. Cut the cores out of the apples and slice them in 4 big slices (about 1/2 centimetre thick). Cover each slice with the pancake batter. Heat a tablespoon of olive oil in a frying pan and bake the apple pancakes for about 4 minutes each side.

If you have some leftover apples, you can chop one in small pieces and serve them on top of the pancakes with some cinnamon. If you like sweet; you can drizzle some maple syrup over the pancakes.
