I love inviting people over for dinner or drinks and snacks. It can be quite challenging to serve healthy snacks when you’re having friends over. Just grabbing a bag of crisps is so easy. But besides being unhealthy, you have to admit it’s not very original either.
With this healthy snack you’ll surprise your friends while taking good care of them at the same time. This snack contains a lot of goodness and tastes a lot better than cardboard-like crips if you ask me!
These cucumber rolls are suitable for vegetarians and vegans and they’re gluten free. And with just 4 ingredients, they’re also super easy to make!

All you need is a cucumber, an avocado, (soy) yogurt and sesame seeds.
Mash the avocado and mix it with a heaping tablespoon of (soy) yogurt. Cut the cucumber in long thin slices. Put a tablespoon of the avocado mixture on a slice of cucumber and roll it up. You can use a cocktail stick to keep it together if the avocado dip isn’t sticky enough. Dip one side of the snack in sesame seeds, so that they stick to the avocado mixture. Serve them on a plate or board with the sesame side up.

You can add some lime juice or cilantro (coriander) to the avocado mixture if desired.
