I’ve created several Christmas recipes before, but this is the first one for which I got inspired by my favorite Christmas attribute: Christmas Lights.
I always love looking at the lights when I trimmed my Christmas tree. It just gives the house such a cosy feel. When I was in my supermarket the other day, I saw red and green colored sugar-coated almonds. The colored almonds made me think of Christmas Lights, so that’s when I decided to create this Christmas Lights cake. Below you’ll find the recipe of this Christmas cake.

For this recipe you can choose to make your own chocolate cake from scratch or to use a baking mix. The latter is a great solution for when you’re short on time, which is often the case in December! I used the Cocoa Muffin Baking Mix from Sostrene Grene. With this baking mix you only have to add one egg, 100ml water and 70grams of butter. I used margarine instead of butter as I like to use as many plant-based products as possible.
I used a licorice string for the string of lights. I live in the Netherlands so we sell licorice strings, but if your supermarket doesn’t sell them you can also use a chocolate decoration pen.
If you can’t find the red and green colored sugar coated almonds, you can also use white colored almonds or green and red M&M’s for the lights.

Recipe Christmas Lights Cake
* 1 chocolate cake
* 3 tbs cream cheese
* Sugarcoated chocolate almonds
* 1 licorice string (or chocolate decoration pen)
Bake the chocolate cake as stated on the package. Let the cake come to a complete cool before you spread it with the cream cheese. Arrange the licorice string and the chocolate almonds so that they look like Christmas lights.
