Gluten free avocado pancakes
I love healthy pancakes (hence my recipe for banana pancakes, 2 ingredient pancakes and vegan pancakes).
And I l love avocado (hence my recipe for avocado fries, avocado buns and avocado eggs).
So I decided to combine these two and create avocado pancakes. Sounds good right?
These pancakes are healthy (no butter or sugar is needed), lactose free, wheat free and gluten free.
Ingredients:
1 avocado
1 egg
1 banana
1/2 cup (125ml) plant based milk (I used unsweetened almond milk)
1 cup (100gr) oatmeal
Put the oatmeal in a food processor and mix until it formed a flour-like consistency. Chop the avocado and the banana and add them together with the egg and the almond milk to the oatmeal flour. Mix until combined.
Heat a tablespoon of olive oil in a skillet and use a ladle to measure the right amount of batter for one pancake . Fry for about 3 minutes, turn and fry for another 2 minutes. You can make 6 pancakes with the batter.
