Beet Hummus
I love the color of this beet hummus, or as I like to call it: Barbie Hummus.
It’s a great way to get your little girl to eat her veggies. This beet hummus is super healthy. It’s vegan, gluten free, dairy free and sugar free. It’s basically just a bowl of veggies!
Here’s the recipe for this Barbie Hummus:
1 can (400gr/16oz) chickpeas
200 gr (8oz) grated red beets
2 tbs tahini (sesame paste)
2 tbs olive oil
1 garlic clove, finely chopped
1 tbs lemon juice
Salt/Pepper
Put all the ingredients in a food processor or blender and blend until smooth.
You can also put the hummus in the freezer and take it out half a day before serving.
