Breakfast Pie
I told you earlier how you can have pizza for breakfast, but this might be even better: pie for breakfast! And it’s healthy too! This oatmeal fruit pie is gluten free, sugar free and fat free. It’s a healthy and festive way to start your day!
The recipe comes from a real ‘pie queen’ called Marike. On her (Dutch) website ohmypie.nl she shares her recipes of her (gluten free) pies. Her pies are absolutely beautiful and they’re all so healthy that you could have them for breakfast.
It would be a shame if only Dutch people can enjoy her recipes, so I’ve translated the recipe for this oatmeal-forrest fruit pie to English for you.
Ingredients:
* 50 grams rolled oats
* 1 egg
* 2 tbs fat free greek yogurt or sugar free almond yogurt
* 100 gr (1/2 cup) forrest fruit
Optionally: 1 ts cinnamon
Optionally: almonds or other nuts of choice
Preheat the oven to 180C/350F. Whisk the egg together with the yogurt in a bowl. Add the oatmeal (and optionally cinnamon) and blend together. Grease a small pie pan and pour the mixture in. Top it with the forrest fruit and optionally the almonds.
Bake this breakfast pie for 30 minutes.
