Freekeh Salad

Let’s get freaky… errm I mean freekeh 🙂
Freekeh is relatively new in Europe, but the bigger supermarkets or your local Arabic shop should have it. Freekeh is a grain made from green wheat. Freekeh, sometimes spelled frikeh or called farik, is very high in fiber.
This recipe is vegetarian and vegan, but if you like meat you can add some lamb sausages.

This Freekeh recipe serves 6 people.

* 300 gram (1.5 pack) Freekeh
* 3 courgettes
* Olive oil
* 1 lemon
* Parsley (you can also use dill and basil)
* 125 (4.5oz) gram peppadews
* 100 (3.5oz) gram Parmesan cheese
* walnuts

(If you’re cooking for 4 people, 1 200 gram package of Freekeh and 2 courgettes should be sufficient)

 

Cook the freekeh as is suggested on the package. Cut the courgettes in slices and rub them with olive oil. Grill the gourgette in a grillpan in about 4 minutes.
Mix the herbs with the juice and the zest of the lemon for the dressing.
Cut the peppadews and grate the cheese if it isn’t grated yet.
Drain the freekeh and mix it with the courgette, peppadews, cheese and dressing. Sprinkle with walnuts.
