Restaurant Taste bij Dirk in Den Bosch doesn’t have a menu

Taste bij Dirk is a very special restaurant, it’s missing something that almost every other restaurant does have. Restaurant Taste bij Dirk in Den Bosch doesn’t have a menu. The chef and his team surprise their guests every evening with a tailor made menu adjusted to your wishes. Before you order you let the waiter know how many courses you want and if you have any dietary wishes and the kitchen team will prepare a menu especially for you.

The unique concept of Taste bij Dirk in Den Bosch doesn’t only give you a very unique experience. It also means that they hardly have any food waste, making it a sustainable restaurant. And at Taste bij Dirk they work with seasonal products so the menu is different every week.
They have a semi-open kitchen so you can see what the chefs are preparing. It matches the open philosophy of Taste bij Dirk.

Owner Dirk ran a wine bar before he started Taste bij Dirk. He still has the wine bar as a matter of fact, it’s just across the street. Here I also didn’t see a menu or wine list, Dirk just asked me what kind of wines I normally like and he served me the perfect one. At Taste bij Dirk the restaurant you also get delicious wines with your dinner. Sommelier Lisa Wong knows exactly which wine tastes great with which dish.

As the dishes change weekly you’ll never know what you’re going to get at Taste bij Dirk but you can get an idea of the quality and finesse by the pictures that I took of our dinner. At the top of this page you see the Pani Puri we had as an amuse. Pani Puri is a snack from India, it’s a round, hollow deep-fried crisp that can be filled with all sorts of ingredients. At Taste bij Dirk it was filled with a turnip salad and a green herbs cream.
After that we got a pumpkin amuse.

We continued with a parsnip salad with a a cream of cashews and a mousse of parsnip served with mushrooms. My main dish was fettuccine with courgette, saffron and sourdough toast.

The dessert we had at Taste bij Dirk in Den Bosch was this tartelette with a forest fruit compote, fresh fruit, a crémeux from ginger and blackcurrant ice cream.

We really enjoyed our evening at Taste Bij Dirk. All the dishes were delicious and works of art. The flavors were really refined. I absolutely recommend it for a special night out or if you’ve got something to celebrate.
