This grilled peach salad is perfect for summer! I love using fruit in my dinner dishes in summer, they add something sweet and refreshing. This salad is vegan and gluten free.
For one portion I used 2 hands of wild spinach, 1 peach, pecan nuts and 1 cubed sweet potato.
I shortly fried the sweet potato cubes in a frying pan with a tablespoon of olive oil. I cut the peach in half and removed the pit. Then I lightly rubbed them with olive oil and grilled them for about 5 minutes.
I sprinkled my salad with balsamic vinegar.
