Healthy Quiche


For this healthy quiche I made an oatmeal crust, instead of puff pastry and I used cottage cheese instead of cream.
This quiche is not only low in fat, it’s also high in fibers.

For the crust, mix 200 gr (2 cups) oatmeal with 2 eggs and 2 tablespoons olive oil. Kneed a big ball and put it in the fridge for 15 minutes. Preheat the oven to 180ºC (350ºF). Cover the bottom and sides of a pie shape with the dough and bake for 10 minutes.
Cover the bottom with cauliflower (I used 150gr/1cup) and smoked salmon (100grams/3oz). Whisk 3 eggs with 400gr (14oz) cottage cheese and pour it over the salmon. Bake the quiche for 30 minutes.
