We all know mashed potatoes as a side dish, but did you know you can also mash pumpkin? This mashed pumpkin, or pumpkin puree, is not only a great side dish for dinner but also a nice spread on toast or crackers.
Pumpkin contains less than a third of calories compared to potatoes so mashed pumpkin is a very ‘skinny’ side dish compared to old fashioned mashed potatoes. Pumpkin is high in Vitamin A and very low in cholesterol.
And with only 3 ingredients, this recipe is super easy to make!
Below is the recipe for a big bowl, perfect for when you’re throwing a party with healthy snacks. You can also use half of the ingredients or whichever amount of pumpkin you have leftover and adjust the other ingredients accordingly.
Ingredients:
400 grams pumpkin, cubed
1 ts chili powder
1 garlic clove
Boil the pumpkin for 12-15 minutes.
Finely cut the garlic. Add the pumpkin, garlic and chili powder to a food processor.
Serve with a bit of olive oil, sunflower and/or pumpkin seeds and chili flakes
