Recipe: easy apple galettes

Galette is a French term for a flat round pie. You can make them with all kinds of fruit like cherries or peaches. I made Cherry Galettes before (check the recipe here) and this time I decided to try something new and I went for apple galettes.
You can make your own galette crust with flour, but with this recipe it’s much easier! All you need is 3 ingredients: puff pastry, apples and apricot jelly. I used small pie tins but you can also use a baking sheet.

Thaw the puff pastry sheets and cut them in circles, I used a cooking ring for this but you can also use an upside-down mug for example. Pre-heat the oven to 180°C/350°F.
Put a teaspoon of apricot jelly on each crust. I always use a sugar free jelly since I think fruit is already sweet enough on its own!
Cut an apple in half. remove the core. Put the apple cutting side down on a cutting board and cut it in thin slices. Place half an apple on each crust.
Optionally you can spread some whisked egg or (soy) milk on the crust for a nice golden color.
Put them in the oven for 40 minutes at 180°C/350°F and your apple galettes are ready!
