Vegan Pad Thai
I love Thailand and I love Thai food! During my trip in Thailand I was looking forward to every next meal. One of my favorite dishes is Pad Thai. I made a healthy, vegan, gluten free version of this popular Thai dish. Check the vegan Pad Thai recipe below to see how easy it is to make this tasty dish!
Ingredients (for 2 portions):
* 200 grams (7 oz) vegan noodles (I used slim noodles, they’re vegan and gluten free)
* 1 red onion, finely chopped
* 3 spring onions, chopped
* 1 package tofu (375 gram/13 oz)
* Thai mixed vegetables (300 gram/10 oz)
* 4 tbs soy sauce
* juice from 1 lime
* 4 tbs peanuts, crushed
Cut the tofu in small blocks and drizzle them with 3 tbs soy sauce. Let it marinate for an hour.
Heat oil in a big wok add the red onion and fry until fragrant. Add the noodles. When they’re cooked, move them to one side of the pan and add the Thai vegetables. Then move the noodles back and stir. After 3 minutes, move the noodles aside and add the tofu. Add the remaining soy sauce and stir fry for 5 more minutes.
Add the spring onions and the lime juice. Serve the vegan pad thai with the crushed peanuts.
