Cauliflower Fritters

I had some leftover cauliflower the other day and I decided to make some healthy cauliflower fritters. They’re a great dish for brunch!

I used 200gr (1cup) boiled cauliflower, chopped. I mixed it with 2 eggs and some spring onion.

Just put a big spoon op the batter in a frying pan and bake them for about 2 minutes on each side.

I served mine with fat free yoghurt.
