Easy huevos rancheros recipe
Huevos rancheros is a Mexican breakfast dish that’s traditionally made with tortillas, eggs, refried beans and tomato-chili sauce. I made a lighter version that’s more healthy and super easy to make! The recipe is perfect for when you’re having friends over for brunch or if you want to surprise your partner with an original breakfast. But this dish is also very easy to make for one person. There’s no reason not to make a good breakfast for yourself when you’re eating alone!
I was inspired for this healthy and easy huevos rancheros recipe by Irish food writer Donal Skehan.
To make it extra healthy I used the Kale Tortilla from No Fairytales. Their Kale Tortilla contain 45% vegetables and are high in fiber.

Huevos Rancheros recipe
Ingredients:
1 Kale Tortilla (or any other tortilla)
2 eggs, slightly beaten
4 cherry tomatoes, cut in half
1/2 red onion, finely chopped
1/2 avocado
Optionally: small handful of fresh cilantro, finely chopped
Shortly fry the tortilla in a skillet without oil. Cook the eggs in a skillet over medium fire, stirring until scrambled. Mash the avocado. Top the tortilla with the mashed avocado, cherry tomatoes and red onion. Garnish with the cilantro.
