Scrambled Tofu
After I had scrambled tofu at Ottolenghi’s restaurant in London, I really wanted to give it a try myself. It’s so easy to make since you only need a couple of ingredients and a great vegan replacement for scrambled eggs.
The funny thing is that it looks and tastes just like real scrambled eggs, so you can combine it with your favorite ingredients. I choose sundried tomatoes to add some extra taste.

Ingredients (for 2 people)
* 1 shallot, finely chopped
* 200 grams tofu (1/2 a package)
* 1 ts kurkuma
* 2 slices whole wheat bread
* 1 tbs sundried tomatoes
* Parsley
Heat some olive oil in a skillet and fry the shallot for 1 minute. Add the tofu and the kurkuma. Use a spatula to crumble the tofu to create a scrambled effect. Fry for about 4 minutes.
Serve the scrambled tofu on whole wheat bread with the sundried tomatoes and parsley.
