Dutch goat cheese company Bettine Geitenkaas send me this lovely cheese basket. I’m going to make several goat cheese dishes in the following weeks and I’ll share the recipes with you below. The first recipe is this savory pancake pie. This pie is for 2 or 3 people, but you can make more layers if you have more eaters! Fry 400 grams of kale and mix it with 2 finely chopped spring onions. Mix 100 grams of goat cheese with 2 table spoons of sour cream. Spread the goat cheese mixture over 4 pancakes and put the kale on 3 of the pancakes. I’ve covered these 3 pancakes with smoked salmon before putting them on top of each other. Use the pancake without kale and salmon as the top one. Put the savory pancake pie in a pre-heated oven (180°C/350°F) for 5 minutes.
Why would you have boring toast when you can have this avocado piece of art? I used spreadable goat cheese, half an avocado and some sesame seeds for this sandwich. I’m telling you spreadable goat cheese is great! It’s the best invention since spreadable peanuts and spreadable chickpeas!
