Oatmeal with baked banana
On this page I’m sharing the recipe of oatmeal with baked banana. The baked banana gives your plain oatmeal so much flavour!
I’m hoping that I can inspire people with the pictures of my healthy meals that I post on my Instagram account. But I also love Instagram as a source for inspiration. One of the accounts that really inspires me to live and eat healthy is ‘Fit met Charlotte’. Besides her tips for staying fit and in shape, she also shares healthy recipes on her website.
One of my favorites is her breakfast recipe for oatmeal with baked banana. This satisfying breakfast is vegan and gluten free.
You can find the recipe in Dutch on her website, and for the non-Dutch speakers I’ve translated it to English here.
Recipe Oatmeal with Baked Banana
Ingredients:
* 250 ml (1 cup) plant based milk
* 30 gr (1 ounce) rolled oats
* 1 ts vanilla extract
* 1 banana
* 1 tbs lemon juice
* 1/5 ts cinnamon
* 1 tbs maple syrup
Mix the milk, oats and vanilla extract. I’ve added 1 tbs of cacao powder to make chocolate oatmeal. Put the oatmeal mixture in a bowl. Slice the banana and put it in a small pan on the stove with the other ingredients. Make sure that the ingredients are mixed and fry the banana for a couple of minutes.
Serve the oatmeal with the fried banana and optionally with some raw cacao nibs.
