Pumpkin Spice Bars
These healthy pumpkin spice squares are a perfect snack for autumn or winter. The pumpkin spices are heartwarming and comforting. These bars, or squares actually, are vegan, gluten free and raw.
In case they don’t sell pumpkin spice in your country, a mixture of cinnamon, nutmeg and ginger will do! Dutchies can also use ‘koek kruiden’.
They’re super easy to make and you can easily keep them for a week in an air tight container. That is if you can manage to not eat them all within a day of course!
Pumpkin Spice Bars
Ingredients:
10 dates
30 grams almonds
50 grams pecan nuts
2 tbs Pumpkin spice (cinnamon, nutmeg, ginger. Dutchies can use koek & speculaas kruiden)
Pinch of vanilla extract
Put all the ingredients in a food processor and blend until finely crumbed. Press the mixture in an ice cube tray to get squares. Of course you can also use a cake tin or baking mould.
Put the pumpkin spice bars in the fridge for about 2 hours. After that you can store them in a container in your kitchen cabinet. Or you can eat them all without feeling guilty!
You can make about 8 bites with this recipe. Each bite contains only 82 calories.
