Did you know that it’s super easy to make your own healthy cookies? On this page I’m sharing my recipe for healthy nuts & seeds cookies. There are quite a few reasons why I’m a big fan of these cookies. They’re healthy, super easy to make and super fast to make. There’s no refined sugar in these cookies. And all you need is 6 ingredients and 15 minutes.
To make these cookies I used Noten en Zaden from Eat Natural, this Nuts & Seeds is actually made for your breakfast bowl. Normally I put it in a bowl with some fresh fruit and soy yogurt for a healthy start of the day. But you can also use it to bake healthy cookies!
The Noten en Zaden from Eat Natural is free of refined sugars and high in fiber. It’s available in the Albert Heijn supermarkets in the Netherlands.
The cookies only take 15 minutes to make, so I often make a batch on Sunday evening so that I can take a healthy cookie with me to work every day. Just store them in an airtight container and they’ll be tasty for 4 to 6 days.
I love it that you only have to throw all the ingredients in a food processor and bake them for 10 minutes. It’s literally done in 15 minutes. So being short on time is no longer an excuse for an unhealthy snack!
Recipe healthy nuts & seeds cookies
Ingredients (6-8 cookies)
50 gram Eat Natural nuts & Seeds
1 tbs cacao nibs
20 gr (3/4 oz) grated coconut
1 tbs peanut butter
1tbs maple syrup
1 egg
Preheat the oven to 180ºC (350ºF). Mix all the ingredients in a food processor or blender. Line a baking tray with baking paper. Use two spoons to make 8 scoops of the dough (make them flat with a spoon).
Bake the cookies for 10 minutes. You can save them in an airtight container for about 4 days.
