Superfood Couscous
Sometimes I surprise myself with a new combination. This time it was time for some Dutch-Moroccan fusion!
This healthy kale and couscous dinner is vegetarian and vegan. Maybe I should call it kalekale 🙂
The recipe is for 4 people.
I fried 300 grams (10 ounce) of kale for a couple of minutes. Then I added 200 grams (1 cup) of whole-wheat couscous and 50 grams (1/3 cup) of raisins. Then I added 600 ml (2.5 cups) of hot vegetable broth and brought it to a boil. I took the pan of the heat and let it stand for about 5-10 minutes (until the broth is absorbed).
You can add some herbs like salt or pepper, but you’ll find that it already is very tasty.
I added some vegetable balls, and it you’re a meat-eater meatballs would taste great with  it too.
