Sweet Potato Pizza
Move over cauliflower! Sweet potatoes are my latest discovery for making healthy pizzas! Of course it’s healthy, but it also looks great to have a bright orange pizza base! This pizza is dairy free and gluten free.
You only need 3 ingredients to make this healthy pizza, and 4 more to top it with all these delicious veggies!
Ingredients (for 2 pizzas):
* 1 medium sweet potato, peeled and cut
* 1 medium sweet potato, peeled and cut
* ⅔ cup rolled oats (65 grams)
* 1 egg
* 1 small can tomato sauce
* 1 yellow bell pepper, cut in slices
* 1 red onion, sliced
* 2 handfuls fresh spinach
* 1 egg

Preheat the oven to 180C/350F. Put the sweet potato, the egg and the rolled oats in a food processor and blend until combined. Optionally you can add a pinch of garlic powder to the mixture. Spread the mixture out in two round shapes on parchment paper. You can also use a pizza pan or pie plate covered with parchment paper. Put the sweet potato pizza crusts in the oven for 30 minutes. Take them out of the oven and let them cool for a couple of minutes. Turn them around and carefully remove the parchment paper. Bake the crusts with this side up for another 5 minutes. Grill the yellow pepper slices for a couple of minutes in the meantime.
Top the pizza’s with the tomato spread, the spinach, the red onion slices and the yellow bell pepper slices. Put the pizza’s in the oven for a couple more minutes to warm the toppings.Of course you can also top your pizza with ingredients of your choice!
