Toast with spicy tomato sauce and eggs

I’m hoping to inspire you with my website and social media, but sometimes I don’t feel like creating a new recipe and I look around online for healthy recipes. When I’m looking for inspiration for new dishes I often use Instagram or Pinterest. During one of my search sessions I found Food Love and Happiness. This Dutch girl has a website filled with healthy recipes. I scrolled around for a while and when I found her recipe for toast with spicy tomato sauce I knew I wanted to make that one myself.

Ingredients (for 3 pieces of toast):
3 slices of wholewheat bread
2 shallots, finely cut
4 tomatoes, cut
2 cloves garlic, finely cut
3 eggs
dash of cumin
dried chili flakes
dried coriander (cilantro)
soy yogurt

Heat a skillet on low fire. Add the shallots and garlic and fry until translucent. Add the tomatoes and the cumin. Stir and leave to simmer at low heat for about 20-30 minutes.
Preheat the oven to 180C/350F. Put the tomato mixture in a food processor (or use a stick blender) and puree until smooth. Divide the tomato sauce on the slices of bread. Carefully crack the eggs above the toast. Make sure the sides have a bit more sauce on the sides so that the egg will stay in place in the middle. You can also crack each egg in a small bowl first and then pour it on the toast so that you won’t have too much egg white.
Bak the toast in about 10-20 minutes (just keep an eye on it after 10 minutes. You don’t want the egg white to be too runny but you also don’t want the yolk to be too dry)
Serve the spicy tomato toast with the chili flakes, coriander and soy yogurt.
