Vegan Christmas Starter: avocado carpaccio

Looking for an original vegan starter for your Christmas dinner? Go for this Avocado Carpaccio! It’s a twist on the classic carpaccio. This avocado carpaccio is a great starter for if you’re having vegetarians or vegans coming over for the holidays. Besides, this avocado carpaccio is more healthy too!
If you’ve visited my blog before, you might know that I’m a big avocado fan. It’s no surprise that there’s avocado in my Christmas dinner too!

Avocado Carpaccio
Ingredientes for 4 people:
2 potatoes
2 avocado’s (not too ripe)
4 tablespoons of pommegranate seeds
Preheat the oven to 200C/350F. Rub the potatoes clean, you don’t need to peel them. Cut them in thin slices with a sharp knife or a mandoline. Use a cookie cutter to make stars of the potatoes. Put the potato stars on a sheet of baking paper in the oven, bake them for 5 minutes, turn around and bake for 5 more minutes. Peel the avocado in the meantime and also thinly slice them, I used a mandoline for this. Arrange the avocado slices on a plate. Garnish with the potato stars and the pommegranate seeds.
