Vegan Pearl Barley
Pearl Barley might sound quite new to you, but it’s actually one of the oldest grains. Pearl barley is super healthy. It contains phosphor, many vitamins and it lowers cholesterol.
I made this vegetarian meal with pearl barley, which is easy turned into a vegan mail by skipping the feta cheese at the end.
Ingredients for 4 portions:
1 tbs olive
2 red onions, finely chopped
2 Tbsp garlic, chopped
3 cups fresh spinach
juice of 1 lemon
1 package (2 cups) cooked pearl barley
¼ cup almonds, slivered
½ cup golden raisins
Optional: ½ cup feta cheese, crumbled
Optional: ¼ cup chopped fresh parsley to garnish
Heat the oil in a large pan, add onion and garlic, stirring for 3 minutes. Add spinach and lemon juice and cook (stirring) until spinach is wilted.
Add the cooked barley, almonds and raisins and warm for a couple of minutes. Season with salt and pepper to taste.
Serve with feta cheese and/or parsley.
You can take a portion to work the next day as this dish is also great as a salad. Just sprinkle with some more lemon juice as a dressing.
