Vegetarian balls with courgette and mozzarella

With my website I hope to inspire people to eat less meat, and I love showing everyone how easy vegetarian recipes can be. All dinner recipes on my blog are vegetarian and easy to make. This recipe for vegetarian balls with courgett and mozzarella is a great example of an easy veggie meal. You only need 4 ingredients and some herbs. The time you actually need to spend working on this recipe is also very limited. It’s mostly waiting while it simmers or while it’s in the oven. Perfect for busy days when you’ve got much more to do than only cooking.

I love serving these vegetarian balls with courgette and mozzarella in small skillets, so every person has got its own pan. But you can also make a big pan and put it in the middle of the table so that everyone can dig in.
Besides vegetarian, this recipe is low-carb.

Recipe Vegetarian Balls Courgette Mozzarella

Ingredients (for 2 people)
1 package vegetarian balls
1 can tomato cubes
1 courgette
1/2 package mozzarella
1 clove garlic
Pepper to taste
Fresh basil leaves

Finely chop the garlic and cube the courgette. Heat some olive oil in a skillet and add the garlic and courgette. Fry for 5 minutes. Add the tomato cubes and let it simmer for 20 minutes. In the meantime, prepare the vegetarian balls as stated on the package.
Pre-heat the oven to 180C/350F.
Add the vegetarian balls to the skillet with the tomato cubes and courgette. Divide the slices of mozzarella over the pan. Add pepper to taste.
Bake the pan in the oven for 10 minutes.
Add the fresh basil leaves before serving.

Nice with ciabatta bread or homemade pesto-cheese rolls.
