Banana bread recipe
This is by far the dish that I make the most. Every other week I bake a banana bread and I put the slices in plastic bags in the freezer. This way I always have a healthy, sugar free snack that I can take to work. This banana bread is much cheaper than the supermarket snacks. Besides it doesn’t contain any sweeteners or fats, not even honey or coconut oil!
Below is the recipe for 1 cake.
Mix 3 bananas, 3 eggs and 100 grams (3.5 ounces) of whole wheat flour in a food processor. You can use a gluten free flour if you prefer.
In a big bowl mix the mixture with 1 tbs baking powder and 30 gram (1 ounce) grated coconut.
This is the basic mixture. I always add some chopped nuts because I love the ‘bite’ that they give, I add about 75 grams (1/2 cup). You can also add raisins, sunflower seeds or raw cacao nibs.
You can put it in a cake tin to get a cake shape, or in a baking pan for in the oven to get a flat ‘plate pie’
Put it in the oven on 180°C (350°F) for about 40 minutes (or 20 if you use the flat baking pan).
Let it cool completely before putting the slices in the freezer, but feel free to enjoy a slice while it’s still warm!
