Oatmeal peaunutbutter cookies

Is there a better combination than ‘healthy’ and ‘cookies’? Didn’t think so!
These healthy oatmeal cookies contain one of my favorite ingredients of all time: nut butter! Try to use a (peanut) butter that doesn’t contain any other ingredients than nuts.
These cookies are vegan, gluten-free, sugar free and even though you don’t need any butter or oil, they’re very gooey on the inside because of the nut butter. This combined with a nice crust (thanks to the oatmeal) makes these cookies delicious!
Below is the recipe for 8 healthy oatmeal cookies.

Ingredients:
1 banana
50 gr (1 3/4 oz) oatmeal
20 gr (3/4 oz) chopped almonds (or other nut)
20 gr (3/4 oz) grated coconut
1 tbs nut butter
1 tbs raw cacao nibs

Preheat the oven to 180ºC (350ºF). Mix all the ingredients in a food processor or blender. Line a baking tray with baking paper. Use two spoons to make 8 scoops of the dough (make them flat with a spoon).
Bake the cookies for 15 minutes. You can save them in an airtight container for about 4 days.
