I love making healthy sweets! My newest recipe are these healthy vegan blueberry donuts. These donuts are sugar free and made with whole wheat flour to make them extra healthy! No sweeteners or butter is used for these blueberry donuts and they’re 100% plantbased.
I made these donuts for LekkerVega.nl, a website that shares vegetarian and vegan recipes. Scroll down to see the recipe video I made with them!
Healthy Vegan Blueberry Donuts
Ingredients for 6 donuts:
- 125 ml unsweetened almond milk
- 200 grams wholewheat flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 2 tablespoons (100% peanuts) peanut butter
- 1 teaspoon vanilla extract
- 100 grams blueberries
- coconut oil for greasing
- a donut pan for 6 donuts
Preheat the oven to 180C. Grease the donut tin with coconut oil. Put the whole wheat flour, baking powder and cinnamon in a big bowl and stir until combined. Add the almond milk, peanut butter and vanilla extract. Stir until combined. Add the blueberries and stir a bit more until the berries are evenly divided over the mixture. Spoon the mixture into the donut tin.
Bake the healthy blueberry donuts in about 15 minutes. Let them cool for 10 minutes before serving.
Randy and I were very inpatient when we had to wait for the 10 minutes to pass by. This nice picture was taken by photographer Annelies Verhelst who also took the picture of me with the vegan blueberry donuts at the top of this page.
