I love to bake healthy snacks! All recipes on my Healthy Sweets page are sugar free, and these healthy blueberry muffins are no exception. On this page I’m sharing the recipe of these sugar-free, healthy blueberry muffins.
For these blueberry muffins, I was actually inspired by one of my own recipes. Years ago, when I just started my blog I shared a recipe for healthy raspberry muffins. The pictures I took were quite ugly back then, but the muffin recipe is still one of my favorites. They’re easy to make and it feels like you’re eating an unhealthy muffin but it contains no sugar and way less calories. I switched the raspberries by blueberries for this recipe.
Right before eating these healthy blueberry muffins, I topped them with some nut butter, banana slices and finely chopped chocolate. But feel free to skip the chocolate if you want to keep them very healthy!
Recipe healthy Blueberry Muffins
Ingredients for 10 muffins:
* 60 gram (2ounce) oatmeal
* 2 bananas
* 2 eggs
* 2 tbs baking powder
* 3 tbs shredded coconut
* handful dried mulberries
* about 30 blueberries
* pinch of cinnamon
Preheat the oven. Mix everything except the blueberries and put the batter in a greased muffin tray. Lightly press about 3 blueberries in each muffin. Bake them for 20 minutes at 180°C (350°F).
