This week I’m sharing my favorite spots in Maastricht with you and today I’d like to tell you about my favorite lunch spot: Bijzonder.
Bijzonder means special and that’s exactly what I think this restaurant is. The menu is special, but the story of owner Dimitra is also special. Whilst traveling in Asia, Dimitra decided to follow her heart and start her own restaurant serving healthy food.
As mentioned, I think the menu at Bijzonder is also quite special. Almost everything on the menu is vegetarian and gluten free and they also have many vegan options. As a vegetarian, I hardly ever have the problem that I don’t know what to choose because there mostly aren’t many vegetarian options. Bijzonder has solved the problem of choosing between all the veggie options a bit easier: they promote the concept of shared dining. So you can order a couple of different dishes with your company. You all get a small plate and you can dig in!
As mentioned, Bijzonder has many vegetarian and vegan options. Look at this Syrian ratatouille with aubergine and halloumi for example. Or the beet salad with red onion and sprouts.
And pretty much everything on their breakfast and lunch menu is gluten free. Even if you normally eat wheat, you should really try their homemade bread with nuts and seeds.
Oh and leave some room for dessert!
