Cookie Pies

Vegan Cookie Dough
For this Vegan Cookie Pie I used store bought vegan cookie dough. Since the fall of 2023 you can buy vegan cookie dough in the supermarkets in the Netherlands and that’s the one I used. It’s from the brand Danerolles that you might know from their croissant dough and cinnamon roll dough. I used their cinnamon roll can for my recipe of strawberry rolls.
They launched 3 vegan cookie doughs. All you have to do is cut the rolls of dough in slices and bake the cookies in the oven. But you can also use the cookie dough for many other things, like this cookie pie or to make Milk and Cookie Shots for Christmas.
Vegan Chocolate Spread
You can use a vegan chocolate spread of your choice for this cookie pie. I used the spread from La Vida Vegan and went for the vegan white chocolate hazelnut spread. The spreads from La Vida Vegan are organic and fairtrade. They are for sale at Holland & Barrett and Ekoplaza.
Recipe 2 ingredient Vegan Cookie Pie
Ingredients:
- 500 grams vegan cookie dough
- 1 jar vegan chocolate spread of your choice
Preheat the oven to 180C. Line a small pie tin with baking paper.
Divide the dough in 2 parts, one part a bit bigger than the other. Knead the bigger chunk of dough and form a flat circle with it. Cover the bottom and the sides of the pie tin with the dough.
Add the vegan chocolate spread tot the cookie dough bottom. Use the back of a spoon to spread it out even, or carefully stir the pie tin a bit so that the chocolate spread divides evenly over the bottom.
Knead the remaining part of the dough and form a flat circle of it. Cover the vegan chocolate spread with the cookie dough. Make sure to softly knead the edges together to form one big cookie.
Bake the vegan cookie pie for 20-25 minutes or until golden brown.
Let the vegan cookie pie cool down in the tin. You can either eat it lukewarm so that the vegan chocolate spread is still soft. Or, for the original cookie pie version, let it cool in the fridge overnight so that the chocolate spread sets.
