Vegan Mother’s Day Envelopes

Want to surprise your mother with something home-baked? You can make these vegan Mother’s Day envelopes! They’re super easy to make; you’ll only need 2 ingredients! And because they’re vegan, they’re also lactose-free. So they’re perfect if you or your mother doesn’t eat lactose or other animal-based products.

Home-baked Mother’s Day gift

I always think that something home-baked is the best present. Everyone loves something that you baked yourself, for the effort and the love. And it’s great to not give something materialistic. Don’t give your mother something she’ll never use or, maybe even worse, feels obligated to use because you gave it to her. Something sweet to eat is always a good idea. And because these puff-pastry envelopes are vegan, everyone can enjoy them.

Envelope variation

I made these puff pastry envelopes with strawberry jam in the center, but you can of course vary with the kind of jam of your choice.
And another great variation to this vegan Mother’s Day recipe is to skip the jam, and instead roll up a bit of parchment paper and put it on the place of the jam before baking. And take the parchment paper out when they’re cooled down again. This way, the envelopes will have some space to leave an actual sweet little note. Also a great idea for Valentine’s Day or your Wedding Anniversary!

Recipe vegan Mother’s Day envelopes

Ingredients (9 envelopes):
1 package of frozen puff pastry sheets (10 pieces)
1/2 jar strawberry jam (or other jam of your choice)

Parchment paper
Flower shaped plunger cutters or cookie cutters (or other shape of your choice)

Preparation
Preheat the oven to 220C.
Place the puff pastry sheets to thaw on your kitchen counter. If they’re not in squares yet, you can cut them in squares.
Cut 9 little flowers out of one of the sheets.
Put a tablespoon of strawberry jam on the center of each square. Fold three of the corners towards the middle and press the dough together between your fingers. Put a puff pastry flower on each center.
Line a baking sheet with parchment paper and divide the puff pastry envelopes over it.
Bake them for 15-18 minutes.
