I made vegetarian mini flammkuchen and I’m sharing the recipe with you on this page. Cheese brand Beemster brought out a cookbook filled with recipes that you can make with their cheese products. I made their Grilled Cheese Sandwich with Truffle Mayonaise before and now I’m sharing the recipe of these vegetarian mini flammkuchen. Normally you have to make dough for flammkuchen, making it quite a lot of work. These flammkuchen are made from tortillas, so it’s a super easy recipe!
Using tortillas instead of flour, gives your flammkuchen a Mexican twist. And ever since our trip to Mexico I like the Mexican kitchen even more! This recipe is a great example of how you can get inspired by dishes that you eat around the world and is a nice combination of flammkuchen from Germany and tacos from Mexico.

Vegetarian mini flammkuchen
Serves 4
Ingredients:
4 tortilla wraps (I used wholewheat)
2 tbs truffle mayonaise
1 red onion
100 grams mushrooms
100 grams tomatoes
75 grams Beemster young cheese, grated
Rocket for garnishing
Preheat the oven to 280C. Cut smaller circles of the tortilla wraps if you want the same portion size as I had. Bake them in the oven on parchment paper for 5 minutes. Dice the red onion and the tomatoes and slice the mushrooms. Spread the truffle mayonaise over the mini flammkuchen. Top with the red onion, tomatoes and mushrooms. Sprinkle the grated cheese on top and bake them for another 7 minutes. Top with the rocket.
