10 recipes with Spinach

Spinach is one of my favorite vegetables. You can use it in all kinds of dishes, from curries to pastas. And you can combine it with so many other ingredients, like cheese, mushrooms and pumpkin. And spinach is very healthy. It’s actually a super food without the price tag. On this page I’m sharing 10 recipes with spinach. All spinach recipes on this page are healthy and vegetarian or vegan.

Spinach white beans mash with veggie balls

This spinach dish is lovely for summer and great if you want to eat healthy. It’s almost completely made from vegetables, although it doesn’t taste that way. This spinach white beans mash with veggie balls, looks and tastes a bit like mashed potatoes with vegetables. But the funny thing is that you don’t need any potatoes for this dish! A big plus because you don’t have to peel and boil potatoes for this dish, a job that I never like doing. The spinach white beans mash does taste as creamy as mashed potatoes would and the vegetarian ‘meatballs’ take care of the finishing touch.

Spaghetti with spinach and tahini

A good pasta dish is always a great dinner idea. So whenever I see a recipe for a nice vegetarian pasta dish, I save it on my Pinterest account so that I always have inspiration for dinner. That also happened with this dish. I saw this recipe for spaghetti with spinach and tahini at Donna Hay. I often love her recipes and the food photography in her books is simply wonderful. This recipe for spaghetti with spinach and tahini isn’t only vegetarian, it’s suitable for vegans too!

Spanakopita

You might not have heard the name Spanakopita often, but you probably know what it is anyway. If you’ve ever been to Greece or any other Mediterranean country, you’ve probably seen it at the bakeries. Spanakopita is a Greek phyllo-dough spinach pie. You can use all kinds of other ingredients for the filling too, but spinach and feta cheese are the ones that are used most often. As a vegetarian, Spanakopita is one of my favorite dishes when I’m in Greece. And in Greece it’s the most famous recipe with spinach.

Vegan Saag Tempeh Curry

For this vegan Saag Tempeh curry I used deep-fried spinach. I normally always use fresh spinach. But it’s great to have a package of spinach in your freezer too so that you can always cook up something with whatever you have at home. The rice and naan bread for this recipe also have a long shelf life, so it’s great to have them at home for when you’re short on time or inspiration.

You might know the dish Dutch Baby Pancake by now, it’s normally a sweet dish that you can have for breakfast or brunch. But you can also make a savory Dutch baby Pancake with spinach. I really love Dutch Baby Pancakes; they’re nice and fluffy and you don’t have to flip them so they always work.

Vegan Polenta Spinach Bowl

This vegan polenta bowl with spinach is healthy, easy to make and 100% plant-based. Polenta has been popular in The United States and Italy for years, but you can now see that it’s gaining popularity in other countries too. As polenta is made of corn, it’s naturally free of gluten and therefore very popular with people on a gluten-free diet.

Wild rice with spinach and pumpkin

I actually made this wild rice with spinach dish for Christmas, to show that you can also eat vegan at your Christmas dinner. But it’s also a great dish on other days. Although I mostly like it in winter, due to the cranberries.
Besides the green spinach and red cranberries, I also used pumpkin cubes and pecan nuts for this main dish.

Stuffed ball zucchini

I saw these ball zucchinis at my online supermarket and I thought they were so nice. It’s a great variety of regular zucchini, so it’s nice for a change. I made stuffed ball zucchinis with zucchini (courgette), spinach and sweet potato. On this page I’m sharing the recipe for stuffed ball zucchini.

Healthy Spinach Dip

Not all recipes with spinach are dinner recipes, you can also use spinach to make a dip. I made this dish with artichoke hearts, spinach and feta cheese. It’s super easy to make, as you can just put all the ingredients in a food processor.

Pasta with Pumpkin and Spinach from the oven

One last recipe with spinach for this list is this dish with pasta, spinach and pumpkin from the oven. I topped this dish with mozzarella. I think any pasta dish tastes so much better if you top it with cheese and bake it in the oven for a few minutes. This pasta with pumpkin and spinach only needs about 10 minutes of oven time.
