Ever since my vacation to Vietnam, I’m a big fan of rice paper. These plant based ‘wraps’ are super healthy and you can use them for a variety of dishes. Most people use rice paper to make Vietnamese spring rolls (sometimes called summer rolls). Although that’s also healthy and tasty, I’ve got a more original recipe for you: rice paper packages!
They’re actually easier to make since you don’t have to roll or fold them. These rice paper packages are great as a starter or as a savory snack.
rice paper sheets
Red bell pepper, chopped
Spring onion, chopped
Optionally: fresh chives to wrap around the packages
Put a rice paper sheet in water and lay it on a cutting board. Put a handful of all the ingredients in the middle of the sheet as pictured below. Grab the outer edges of the sheet and put them together in the middle. The rice paper will already stick together but for decoration you can tie a leave of chive around it.
