Vegan recipe for World Animal Day

As you probably know this Thursday, October 4th, is World Animal Day. People have had the tradition of treating their pets well and giving them a little extra on this day for years. But isn’t it strange if you would eat animals on this day? Let’s be nice to all animals on October 4th from now on. Pets or not. Especially for this World Animal Day I created a vegan recipe for you guys. This recipe is super easy to make, tasty and very animal friendly as no animal products where used whatsoever.
This Thursday you can make these Lebanese flatbreads with SoChicken sticks and courgette for an animal friendly meal. The recipe is very easy ta make, so why not give it a try?

I used the SoChicken sticks from SoFine for this recipe. Although it has the word ‘chicken’ in it, these SoChicken strips are 100% plant-based. Although if you won’t tell anyone, I’m sure no-one will notice that they’re vegan. SoFine is a brand that has several vegan products, check out my Portobello burger recipe with the SoFine asparagus burger or my Sweet Potato Pancakes with their kale burger for example. You can buy the SoFine products at the Jumbo Supermarkets in the Netherlands. In my hometown Tilburg there’s a big Jumbo Supermarket at the AaBee Fabriek that has many SoFine products.
So go to a Jumbo supermarket near you today, so you can make this vegan Lebanese Flatbread with SoChicken sticks recipe on Thursday for World Animal Day!

Lebanese Flatbread with SoChicken sticks
Ingredients (for 2 people):
1 package SoChicken sticks from SoFine
2 Libanese flatbreads (you can buy them at the toko for less than 1 euro per package of 5)
100 grams pumpkin hummus 
1 courgette
1 tomato, chopped
1 red onion, chopped
Optionally: fresh parsley

Thinly slice the courgette, I used a mandoline to slice it. Dry the courgette slices and grill them shortly. Heat some olive oil in a frying pan and fry the SoChicken sticks for 3 minutes on each side. Cover the flatbreads with the hummus. Top with the grilled courgette, SoChicken sticks, tomato and onion. Optionally you can top it with some fresh parsley.
