Kale burger with sweet potato pancakes

Kale is very healthy as it’s high in fiber and low in calories. Kale is one of my favorite ingredients in winter so I was thrilled when I found a kale burger in my supermarket! The kale burger from SoFine is vegetarian and vegan. It’s made with kale, sweet potato and tofu. It contains over 70% vegetables and is high in fiber. It has added vitamin B2 and B12 so it’s perfect for vegetarians and vegans!
I decided to try something new with the kale burgers and combined them with sweet potato pancakes. These pancakes are a morning favorite of mine normally, but as kale and potatoes are a great combination I made a dinner recipe combining the kale burger with the sweet potato pancakes.
Below is the recipe for 2 people and a video I made to show you how I created this sweet potato pancakes stack!

sweet potato pancake stack kale burger

Ingredients:

  • 2 SoFine kale burgers
  • 1 sweet potato, peeled
  • 2 eggs
  • 3tbs (buckwheat) flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • goat cheese, crumbled
  • agave syrup
Cut the sweet potato in medium-sized pieces and boil them for 10-15 minutes until soft. Drain the sweet potatoes and put them in a large bowl. Mash the sweet potato pieces and add the eggs, flour, cinnamon and baking powder. Whisk until smooth.
Heat a teaspoon of plant based butter in a skillet and scoop 1/4 of the batter into the skillet. Cook for 3-4 minutes, flip it over and cook for another 2-3 minutes.
In the mean time cook the kale burgers for 2-3 minutes on each side.Make a stack with the sweet potato pancakes and the kale burgers. Top with the goat cheese and the agave syrup.
