Vegetarian starter: Christmas Crackers

You might know Christmas Crackers as the paper table decoration that you can pull open with a ‘crack’ that reveals a Christmas hat and other decoration or small gifts. But you can also make edible Christmas crackers! It’s a great starter or appetizer of your Christmas dinner. On this page I’m sharing the recipe of these vegetarian Christmas Crackers.

I made these vegetarian Christmas Crackers with phyllo dough. I bought phyllo dough to make Spanakopita, a Greek spinach-feta pie. I had a large left-over sheet and I used it to create these edible Christmas crackers. So if your main dish also needs phyllo dough, you can make these crackers as a vegetarian starter. But you can also only make these Christmas crackers and save the remaining phyllo dough in the freezer for later.

You can fill the Christmas Crackers with whatever you want. I made a vegetarian version with spinach and Parmesan cheese, but you can also make vegan Christmas crackers by replacing the cheese with mushrooms or tomatoes. Scroll down for the recipe of these vegetarian Christmas crackers.

Recipe Vegetarian Christmas Crackers

Ingredients (serves 4):
1 big phyllo dough sheet
100 grams fresh spinach
50 grams Parmesan cheese flakes
Olive oil

Preheat the oven to 180C. Defrost the phyllo dough sheet. Cut the spinach smaller with a sharp knife. Mix the spinach with the cheese in a bowl.
Cut the phyllo dough sheet in four squares.
Put 1/4 of the spinach mixture on the top part of one of the square sheets. Leave the edges free. Spread out olive oil over the rest of the sheet. Roll the sheet up tightly. Twist the edges to create the cracker effect. Use cooking string to keep the edges in place. You can keep the string on in the oven. Just have your guests remove it right before eating.

Bake the vegetarian Christmas Crackers in the oven for 15 minutes.
